I know everyone's tastes are different, just looking to maybe get a base for what would be appropriate since I'm going to try smoking a whole chicken for the first time today. The recipe I'm using says apply smoke the entire time its cooking which will be 4-5 hours maybe, but I always hear chicken is real sensitive to smoke flavor. So what is everyones personal preference on how long and what wood for whole chickens? I planned on using orange wood today. Cheers

Hello Brandon.  I would guess I am gonna be your worst nightmare.  4-5 hours to smoke a yard bird??  Spatchcock that bird, run your smoker temp up to 300-325 and smoke it for 1-1 1/2 hours.  Life is too short for silly smoking times.  I say that with a reservation:  SOME meat MUST be low and slow.  I can hear other members screaming here but chicken isn't one of those meats.  Hot and fast works better for chicken.

Now I will brace myself for the bashing the other members may bring on.

I'll take that into consideration, however my smoker only gets to a max temp of 275. I was thinking of taking it out of the smoker at around 145-150 and throwing it on my grill at 400 degrees so the outside gets nice and crisp.
