OK, So I am in the prep stage of my first brisket flat and second AMPS smoke on my MES 40.  I am planning on  smoking at 225 using hickory pellets until I reach 160 and then foiling until it reaches 200.  From what I have read that is pretty much the standard.  Any other suggestions would be appreciated!!

Finally got my lazy butt out of be dmd got the brisket into the smoker at 7:30.
Injected and a little mustard with mor rub. Ready for the smoker.
 
Brisket with sweet potato fries, Mac and cheese and garlic spinach. Brisket tasted good and was tender. Did not have the smoke ring I wanted though. On a positive note, I got the AMPS to give good smoke for 10 hrs with no intervention. Baby steps right?

I think you will find you don't get much smoke ring in an electric smoker. That being said, the brisket looks great. I would love a slice of that.

Like Disco said, No Smoke Ring with an electric smoker. I haven't gotten one for 4 1/2 years with my MES 40, but Smoke Rings are all show anyway.

My Son gets them with his BGE, and there's no taste difference.
