corned beef summer sausage?

I've been smoking for a number of years but I am new to snack sticks and smoked/cured sausages.I made my first summer sausage and I think it was great. But I frequently like to go outside the box, (sometimes it's even edible)

Has anyone ever used ground corned beef for summer sausage or snack sticks? I'm sure the salt would have to be adjusted downward.

Any thoughts or recipes?

No, but it sounds interesting for snack sticks.

I've never tried that - I like to cure my own meat. If you soak it for a while with some potatoes that will help get rid of a lot of the extra salt. If you try this by all means let us know how it turns out  thumb1.gif
