I've been smoking for a number of years but I am new to snack sticks and smoked/cured sausages.I made my first summer sausage and I think it was great. But I frequently like to go outside the box, (sometimes it's even edible)
Has anyone ever used ground corned beef for summer sausage or snack sticks? I'm sure the salt would have to be adjusted downward.
Any thoughts or recipes?
