Indirect cooking will keep the bird from charring. Set up a charcoal ring or either set all the coals to one side of the grill and cook bird on other side assuming you are coming with coals. If not same with gas light burner on one side and cook bird on the other. I test for doneness by shaking the wings and legs. They should feel pretty much disconnected and free to move about.
