Just a note to say what a great sight to be.Im here in Melbourne Florida and love BBQ.From Calif and was not exposed to much to this. Been in Florida 20 years now and tomorrow is my first attempt with smoking with a upright gas smoker. Pork sirloins 10# and chicken pieces.. wish me luck.

Welcome from Maryland. You have found the right place to learn. With the knowledge that I found on this site, my cooks are edible and enjoyed. Read up on all the techniques and pointers and you smokes will be great .

well up at 5:30 and in it wentwhat a fantastic day after the storms last night. Had tornados. Little one. Missed us though.Here they are half way done. Soaked apple chips in apple juice and been injecting apple juice into the meat.almost done. Added the chicken quarters in a little while ago. Will update with a full belly. God I hope its good. Have not eaten today.lol
