Hi All!

This isn't the first smoking forum I've joined, but it's the first one I've posted on concerning charcuterie.  

I own an 18" Weber and a no-name adjustable charcoal grill, along with a cheapo gas grill for when I'm just too darn lazy for everything else.

I'm in my 8 month of marriage, and I owe my smoking hobby to the ONE wedding gift I got that I asked for...my 18" WSM!

Anyway, here are a couple shots of my latest smokes, hope to get a lot more info from all of you in the next little while.

Yeah, they were rolled because at the time I wasn't really sure how to optimize the space on my top rack.  Now I just cut the ends off the slabs so that they're uniform and straight, and place the cut-offs on the free space at the sides of the grill.
