Started some more cheese on Sunday as I have just started to crack open the last batch I did 3 weeks ago. Raided the fridge for whatever was in there, some mostly eaten marble, half eaten Gouda and medium cheddar. Had one unopened wedge of Gouda as well. Didn't matter if it was cheese it went in. Smoked with hickory pellets for 2 hours. 1:15 into the smoke I got called into work so the wife had to take the reigns. She is learning the art! It was around -5C outside and with the AMNPS running it stayed a lovely 60F in the MES. Now to wait…good thing I've still got some supply.

The iPhone doesn't show the colour as well, they are much deeper golden than they look. Should be good!
 
They look great. Now you just have to resist eating them for a couple of weeks...
