Wings on the Mini MWSM

On the way home from golf today and had a craving for wings! 


I'm going to cook these at 250 for a couple hours ... Then turn up the heat to crisp the skin. .


I'm trying out B&B Oak charcoal briquets in the mini.  The start well and smell great. The smoke will be apple wood chips


All loaded up.  Using 2 racks. The top and the middle. I have my Maverick probe on the top rack. 
 
Looks great. I need to make some wings now.

Looks great Brian !! Those wings look fabulous & can't wait til the finished Q view ! I'd be interested to know what ya think of the charcoal your givin a test drive !! You always do your wings at 250* ?? I wanna do a mini build but gotta sell a smoker before I can add one... Haha

Justin!  How the heck are ya?  

Yes On the mini I cook the wings about 250 for 2-3 hours.  Then throw on more LIT charcoal and bring them up to 300 - 350 until the skin crisps up.  Heck, I dunno if it the correct way to do them... But there are never any leftovers. 

Post those WANGS brother.  I've got Lots of spring time chores to do down here on The Ponderosa tomorrow... But i'll be watching

Very nice. My dad says we just to throw the wings away. Now they sell them. Lol
