Birthday butt

Today is my youngest daughter's birthday so I decided to smoke a butt and some beef back ribs. Got the Chargriller running at about 275.

I'm only going to cook the ribs for about 5 hours, they'll be going on around noon.

Those look amazing. Mine are the short ribs so they aren't that big. The meat will pull back from the bone and it's like a meat lollipop.

As luck would have it, a 25 mph wind out of the west is making this cook a little sporty.

Foiled the butt at 165 and ran it until IT hit 201. Let it rest for half an hour and it went quick.
