Making some sausages - Bratwurst & Hot Italian With Stuffed Ports

Well I stumbled across some VERY nice portabellas on my beer quest so I decided to make them along with the sausages.

I threw some of my burger In the smoker with the eye of round I was doing while I got things ready. I chopped up some onion, peppers, lettuce, colby jack, mozzarella & smoked mozzarella then got the burger out of the smoker - it had 1/2 hour in the smoke.


I threw the burger on the stove with the onions for a while.


Added the peppers, some hot sauce I made & a little of my ground habanero for good measure

I got some Stubbs started in the chimney & scooped my stuffing mixture into the portabellas. The 2 on the left have smoked mozzarella, the bottom right plain mozzarella & the top right naked.


The charcoal was ready so I got the grill going. I made a patty with the bit of burger I didn't need to make the stuffing & put it & some sausages on. Bratwurst on the top right, Hot Italian for the bottom 3. The baby link is the last one made when the stuffer ran dry so I wanted to use it up before all the others made too much fun of it... 


After the burger & sausages cooked for a few minutes I added the mushrooms. Between the smell of the grill & the smoker right beside me I really had to struggle to keep from drooling everywhere!

Soon everything was done & it was time to eat!

I gave it a healthy dose of my homemade tomato sauce.


& it was ready to go.

The sausages were great - awesome flavor, good texture & nice & juicy - just how they should be

The stuffed ports were really good too. I hadn't made any of them for a while & they were a good compliment to the sausages. Another easy meal & needless to say I was pretty well stuffed!

WOW, them shrooms look great.

Cant wait till the amish farm stands open back up.

Damn! Those sausages look great. Sausage is another thing on my list to try. I've made patties but never cased it. I have all the attachments for my kitchen aid mixer. Do you think that will be alright to start out?

That will get you by to get started & see if you like making sausage. If you do like it though you will want to get a dedicated grinder - They are much faster & there is at least one member on here who blew the side out of their KitchenAid using it for sausage. Just a quick warning - once you try homemade sausages you won't want to go back to store bought!
