Corned beef brisket

Well her is one out of the 7 I'm cooking. A lil test run I like to call it. The wifey is making a Ruben dip for the party tomorrow and was going to buy some corned beef at the deli. No way was I letting that happen. So I am smoking one tonite then the rest tomorrow on my herizonal smoker. This one I did on old trusty "Weber performer" love this grill. Indirect at 200deg. Low and slow baby.
 
Well the brisket turned out awesome. So good I decided to smoke the others on it as well. Plus I didn't feel like digging out my horizontal to smoke the rest. Haha.
So here's what I got I have 3 3lb briskest with my secrete rub on em. Guna smoke em at 230deg till internal temp 180. If it doesn't get their in 6hr I'll finish in the oven.
 
Did mine yesterday. Trimmed about 90% of the fat off my store-bought corned beef packer. Didn't bother separating the point and flat.

It started at almost 15 lbs. Probably ended up around 13 lbs. when I was done.  Laid it in a square,  foil turkey pan, added some more pickling spices and 1 qt. of beer. Covered with foil, and set it in the oven at 275°. After about 5 hours, the IT hit 190°, and it was toothpick tender! Wow, that's the easiest Irish-style corned beef I've ever cooked. Never even went into a stall.

That is amazing to me, never seen a corned beef packer, when I was a kid in the south never saw a corned beef anywhere till the Navy! About all you see here now is the Cook's or Hormel cryo packed pieces.
