I've been reading this forum for quite a while and had a hankering to go ahead and join the conversation. I've been volunteer cooking with the Lighthouse Charity Team since the '80's in a humanitarian role. I recently retired as a Fire Chief and want to really delve deep into smoking meat at home. I'm used to using commercial rotisserie Southern Pride units, and now want to add a pellet smoker to my personal pit collection.

I looking at Cookshack and Yoder. Still researching what I want to do. I love all the help I've used from the forums these last several years, and and learning from the group on reaching out to new recipes and techniques. Looking on learning more from you.

Welcome Jeff, pellet smokers are real fun to smoke with ! I personally have a GMG Daniel Boone and absolutely love it ! It has been a pleasure to use.... Good luck on whatever rig ya decide to go with and again welcome ..... WHB

Thanks for the great reception! I feel pretty welcome already! I got some ribs to smoke tomorrow and I'm going to try a few different techniques. I just got finish with the high school FFA turkey's that didn't make Houston Livestock Show and Rodeo, and I found the best Apple Sage brine that was pretty amazing. I have the rest of FFA to smoke after next show. I'll let you know how it goes!
