Ribs and a bit of pork belly.

It's a good thing that my butcher likes my BBQ. Yesterday I stopped by to grab a couple of racks of ribs to do this weekend. Anyway

he asked if I would smoke a rack for him as well. I said sure, if I'm doing two, three is no big deal. As I was leaving he tossed in a 2 lb

piece of pork belly to cover the trouble of doing the ribs for him.

I put the pork belly on at 10 am and just put the ribs on just now.

I'll pull the belly in about 30 min and reserve to cut up and put in a

pot of beans that I'm going to do this afternoon to serve with the ribs.

Very tasty looking. Can't wait to see the end result.

What all did you do to the pork belly?

I'm curious about the pork belly as well, did you just season and smoke it?
