~~My 1st attempt at curing duck. I'm using a dry cure. After 12 hrs, the cure has drawn out so much moisture that I now have a "brine". The recipe calls for a 7 day cure. Should I drain the liquid & re-rub with dry cure? Any other thoughts would be greatly valued.
 
Leave the liquid in the bag for the entire duration of the curing time..... Turn the bag over daily..... Then rinse the surface and dry and follow the rest of the method.....

Are you using cure #1 or #2 method....
