Newbie in Matthews, NC

Hi guys, my name's Jason and I live in Matthews, NC. I used to smoke and grill a little, but about 4 years ago my wife and I became vegetarian. My wife recently had some health issues and her naturopathic doctor suggested that she start eating meat again. This has helped her health issues dramatically so we are now back to being omnivorous! We buy beef and poultry from local, small, organic farms so that helps with our conscience and we know that the animals have been well taken care of. I am looking forward to getting back into smoking - the chicken thighs I used to smoke were legendary among my family and friends, but I want to get more adventurous and try new recipes. We are limited to beef and poultry due to the nutrition guide we are following, but I'm sure we have many options. I bought a Masterbuilt 30" electric smoker last weekend as my old propane smoker was showing the signs of being neglected for the last 4 years. I'll be smoking my old tried and tested chicken thighs to get me back into it this weekend. I'm looking forward to searching the forums for many more delicious recipes to try. Very glad I found this forum!

Hi Jason, glad to have you join us. My oldest son shares your name! Sorry to hear that you wife had heath issues- a couple of my daughters tried going vegetarian but once I started smoking meats- they became meat eaters again. You'll find plenty of recipes that should fill you needs.

Hello Jason and welcome!  We're glad you joined our family.  Sorry to hear of your wife's health problems, but its good to hear she's getting better.  You'll find this to be a very friendly place to learn and share ideas on smoking, grilling, curing, etc.  We enjoy helping and encouraging each other, so just ask when you have questions...someone here will surely have the answers.

Sorry to hear your wife had health problems but it is good she is improving.

Hey Glocksrock, do you buy your supplies locally? I remember there used to be a BBQ store at The Arboretum on Providence RD but it's gone now. I guess I'll be buying wood chips from Lowes / Home Depot. Do you recommend the AMNPS for use in the MES?

 

Disco - thanks for the welcome from Canada! I think the only problems I might face with my choice of meat is the lack of fat in the organic, grass-fed beef. I may need to do some tweaking! I buy my ground beef from a couple who live 5 minutes away from me. They only sell ground beef as their cows are too lean for good steaks or roast, so they use every cut to make the ground beef. It makes the best burgers I've ever tasted, and they sell it for $5 / LB!!

Sounds like great ground beef at a great price!
