No food, just going to burn it off.

Filled the basket almost all the way, added 12 or so lit ones to the top.


And away we go.

So this hung there for about an hour with the stock diffuser plate inside. I'm happy with that.

A total of 2 hrs, it dropped to 275ish. Yard bird should be no problem here.

Will try a rib cook soon keeping it @275. I have some 4" X 4" Granite samples I am going to use as the heat sink. Pie plate on top to catch the drippings.

I can't wait to experiment with this!
 
Good run Sam.   For hot cooks to crisp that chicken skin you can use the tamalie steamer plate. Or a simple disposable aluminum pie plate.  If you want to go low and slow, use the terra cotta saucer or a pie plate filled with sand. 

Versatile.  You can cook many different ways on these little guys. The best smokers ever!
