Well, I finally did some Beef jerky doing a pepper and a teriyaki jerky recipe in my Masterbuilt gasser smoker. I wanted to find a way to load each smoker tray while out of the smoker, and realized I had some of office file cabinet internal file supports, which would have worked perfectly but they were a tad too wide, so I chopped out 1/2" and welded the two pieces back together as you can see in the first two pics looking at the the horizontal bars.

Top shelf is the pepper jerky, bottom is teriyaki. Each skewer supported by Stainless Steel bicycle spokes cut and shaped into S hooks.

To say the least, I learned a lot from doing this batch. Lots of things I would do differently but I'm too tired to remember what they are. LOL
There are so many great jerky recipes out there. It was so hard to pic just two of them but I had to. Next time I will try two different ones, then again & again. I appreciate all the help so many gave me during my initial jerky questions era.

Tonight, my kids happen to show up for dinner and instead loaded up on jerky.....belch! They're both going home with most of what I made, which is the way it should be.

I did good.

Very cool. Thanks for sharing. Looks mighty yummy. I bet you own a nice slicer. Mighty pretty strips. Here is my latest effort which come off this morning. Its defenitely Peppered Terriyaki.

 
Looks good ! You must have a lot of free time. My rack holder is a cardboard box with one side cut out and I boil a box of paper clips to hang my jerky.

It was in the smoker for 5.5 hours @ 160-165* which  3 hours of that was actual smoke time using a blend of Hickory & apple.  My son called me today asking me to smoke more this coming weekend but I'm already booked to do some Salmon Jerky.  Sorry son, but I know he'll get some of that to help tie him over.
