Newbie from Wisconsin.

I am a smoking virgin. I was just given a dehydrator for xmas and got addicted to making jerky. Then I after having jerky from a butcher shop and know that they smoke it not to mention having some smoked chops I decided to get a smoker. I got a Smoke Hollow Electric smoker. I bought some extra racks, a pan to fit over the water and chip pan to catch the drippings, and some chips ( apple and hickory ) I'm not sure if I need anything else so I wouldn't mind any pointers tips or tricks. I also don't know if I will need to make any modifications to this and if so what and how. I'm all ready to go full bore at this so any comments would be appreciated.

Welcome, Dego. If you are going to go beyond jerkey and chops you will need a good remote meat thermometer. Most around here, including me, like the Maverick ET 732. You can find many sources for it, including some of the SMF sponsors.

Sounds like your addiction has begun, welcome to the world of smoke.  :biggrin:  As Chuckles said, a good thermometer is a tool you'll find very valuable, it made an instant difference in the quality of food I was making when I got mine.  I also use a Maverick ET-732 and just ordered a Thermopen.  I don't think you can go wrong with either, I smoke a lot of multiple meats so I see a good need to have both.  Again, welcome, there is a wealth of knowledge here, enjoy your new hobby.
