Recepie suggestions ?

 I need some suggestions on what to do with this 3lb pork loin roast. I could eat pulled pork for every meal however, my wife has grown tired of it.I need some ideas. Its got to be fairly simple as it is already starting to get late and the cupboards are a little sparse.Any suggestions would be greatly appreciated. Thanks guys.

I bout a pork loin today, cut it half, Salt, Pepper and Garlic put on both, into a ziplock bag, then into the freezer.  One will be smoked and sliced, the other done in either the Slow Cooker or Pressure Cooker, time will tell.  But I would not do pulled pork with a Pork Loin.  For pulled pork I would use a Boston Butt or leg roast.
