First smoked turkey legs with q-view

Had some turkey legs that I brined with a simple water,salt, and sugar solution.

Pulled the skin back and mixed up two different rubs with oil to make a spice paste. One was Memphis dust and the other was an herb and garlic rub I use on chicken a lot.

Rubbed three with each kind of rub and rolled the skin back up. My goal for this smoke was to go hot and fast in hopes of getting crispy skin (I try not to eat the skin during the week, healthy eating and all but I still wanted to try it). Well, I ignored the forecast of impending thunder and lightening storms because it wasn't raining at all when the smoker was up to temp and making beautiful smoke. Of course, torrential downpour about two minutes after the turkey legs go in. Temp starts dropping in the smoker and I couldn't get it above 300 the rest of the smoke.

So the skin was flabby but the meat was moist and delicious with some sweet apple smoke.

And here they are with the skin removed. Gonna have them for dinner later. It's gonna be a bbq fest. Had off this week and made brisket Wednesday, two kinds of pulled pork yesterday, and turkey legs today. Good thing Friday starts the weekend...so much for eating healthy. Thanks for looking.
