Wish us luck this weekend!!

A co-worker of mine is fanatic over my 'Que, and approached me several weeks ago if I would be willing to cook for his church's get-together, which will be this coming Sunday. He's providing the meat, and the charcoal, whichever brand I wanted. All I'd be out is my time and my seasonings, and of course some wood. Being he's a friend and it's for his church, I agreed. I had anticipated finishing my large smoker by this time and this would be good practice run for us to work together cooking. Unfortunately, time played against us and I was unable to finish my smoker, but thanks to a connection, I am able to borrow one for this cook. 

  So, this Sunday morning, we're loading up and cooking all day at the church for their evening event. In all, it will be about 15 pork loins and 40 lbs of chicken. First time with the new team cooking, on a smoker I haven't used before. Fingers crossed.

Hello.  So you are saying; NO PRESSURE.  WOW!  That could be a tough gig.  I hope the smoking Gods smile on you.  This isn't your maiden voyage so you should be fine.  Good luck.  Keep Smokin!

Ok, well things, although a little hectic, overall went smooth and successful. We fired up the borrowed smoker earlier than necessary so that we could have a little extra time to adjust the temps, being unfamiliar with this one. The smoker wasn't hard to handle at all, and we were able to get it to a steady 230 temp with little problems holding it there. My son came out to help.... he's eleven, but he helps out a lot at the house. He makes sauces when I'm busy, and usually likes to put the rub on the meats when we cook. He says he wants to be a chef, and that's great. I know that, regardless whether he stays with that choice or changes later on, it's a skill he'll always need, and it's GREAT father and son time together!!

 So, my son Trey, and my team member, Shane had a great time cooking for the church. Once we turned over the meat for them to make plates for the people, on three occasions they came back outside asking if we had more on the smoker, as ours was running out fast. Great news considering we weren't the only ones cooking for the church. Others had cooked meat at home and brought it, but the people were quickly asking for more of ours. Can't ask for any better than that.
