I have been wanting to try this for a while.  Decided to give it a go over the weekend.  I used a recipe for the meatloaf I found online.  I used some old French bread and put it in the food processor to make bread crumbs.  Then I toasted them in the oven at 350 for 6 minutes.  After it cooled I mixed it with catsup, cheddar cheese, garlic, onion, buttermilk, eggs, buttermilk, salt, pepper, parsley and ground sirloin.  I formed it into a loaf on some parchment paper. 


Then I cut the parchment paper to just larger then the loaf. 


I smoked it at 250 F until it was 160 F in the center.  Be sure to do something constructive while it's cooking.  I made a self watering planter out of a 5 gallon bucket to plant some hot peppers in.  


Back to the smoke.  When the meatloaf was about was about 30 minutes from being done I spread some BBQ sauce on top

It turned out really well.  Even my 3 year old ate it up!  I will definitely be trying this again.
