Holy smoke that looks GREAT!  Sorry. I'm a month late.  My travel schedule has been a bugger.   Where I'm from the neck has always been tossed into a dutch oven with a simple assortment of vegetables that were handy, some flour and a few shots o whiskey... Brazed for about the same time it took to drink a half a bottle of Jack.   Then served the stew around the fire.   Never gave a thought about going 5 Star like you did.  Awesome.

Good to see you!  Sorry to hear about your travel schedule, hope that slows down soon for you. I haven't been on SMF too much myself lately due to other time commitments. 

Thanks very much for the compliments!  I would have braised the neck whole like you, but the dang CDC got me all weirded out.

But between the bottle of Jack and serving the stew around the campfire, I think you have got me totally beat on presentation and atmosphere!
