Not really(the attitude part)...just wanted to get your attention.
I do however live in the Detroit area. Grandparents migrated here from Belgium and there was/is a large Belgian population in this area. With that came bike racing, homing pigeon racing, feather bowling, etc. AND sausage making! My grandfather spent some time working in a butcher shop in the old country before becoming a Detroit auto worker so this is likely where the interest in sausage making originated in our family.
I have been making sausage with family (grandparents, parents, aunts, uncles, cousins) for as long as I can remember...it is honestly one of my earliest memories. We have a few regular family recipes we have always made including a blood sausage (we haven't made this in years...lost track of grandpa's recipe), a dry cured sausage, and a couple other pork based sausages. We experiment a bit and have added a good fresh Kielbasa to the regular rotation.
Personally I am not a hunter but do enjoy eating game and my cousins who are hunters have experimented with game sausages as well with good results. I have interest but little experience with smoking and would like to experiment and come up with a snack stick recipe. I also have some jerky experience using a dehydrator & have had good results.
Anyway...I enjoy food and came across your site. Been lurking for a while and finally created an account so I could start posting. I am by no means an authority and will likely ask more questions than have answers. Thanks for the forum.
