@Nick00. I have a MES30 as well. Love it. I would smoke at 225-235 for about 2-3 hours (2 for baby's 3 for spares). Then wrap in foil and add brown sugar, honey and apple juice for 2 more hours. Then one final hour of smoking and add sauce if you like. Good luck and take pics of your effort!

Oh man. Adding honey and brown sugar. That sounds delish. Im trying that in the am.

Do you add the brown sugar and honey directly to the meat and the juice just in the foil?
 
Yes. Sprinkle honey all over ribs then brown sugar on top of that. Then I just pour some apple juice around the ribs and fold up the foil. So you are basically creating a juice steam pouch.
 

Well I tried it and it was beyond amazing. Everyone loved the sweet flavor. My only issue was tenderness, which I'm sure many have. I did the 3-2-1 method, and after the 2, the meat was barely staying together. I put them back in, added some BBQ sauce after 30 min then took out after another 30. They were still fairly tender but some parts didn't fall off as much as I would like. Any recommendations? I have the MES 30in smoker
