MES 40 in Northern Arizona

I just bought my husband the MES 40 and it should be delivered today. I'm not giving it to him until this weekend but wanted to do some investigating on my own to ensure that I have everything necessary to be able to smoke this weekend. Once he gets it, I'm sure that he will be the one mostly using this account, since he joins every forum for things he purchases.
I'm planning on picking up a Boston butt and doing a dry rub on it. How many pounds should I go for to feed 6 adults? I will take any information such as cooking temp and time, etc.
