Working on my third generation smoker, went from charcoal, to electric, to now a Smoke Hollow 44" propane vertical smoker.  Loving it!!  I enjoy smoking all types of meat and fish.  The new smoker is giving everything a wonderful sweet taste compared to the charcoal and electric.  Any advise on the PS4400 or vertical propane smokers definitely welcome.  Been watching this forum since starting work at a local BBQ joint part time and love the site.   Keep up the great work everyone.  Going to be insulating my smoker as soon as I can and tying it into the house propane.

Salmon is my favorite but working on a good Whiting fish dip, not happy with anything I have found online so far though.  Epic fail this past weekend using a allrecipes.com whiting dip.  Any help greatly appreciated.  Going to try and smoke some Tilapia in the next week or two.  How about you any good smoking fish suggestions?
