I have 2 High Mountain Jerky kits to use.  I have 2 wild turkey breasts to use.  I plan to grind the turkey ad use my jerky gun.  I have a MES 40 with or without AMNPS.  I also have a Nesco dehydrator.  I have used the flat tip on the gun before to make the strips then into the Nesco which has worked fine but takes a long time.  I am wondering if I am better off putting the turkey in the smoker on my mesh racks(for the smoker) and putting some smoke to it or just stick with the Nesco.
 
Since your really making meat sticks with poultry I prefer to put in hot smoker to 165 for safety then reduce temp and smoke a few hrs for flavor then move to Nesco til done because its easier to monitor while watching TV.
