Looks good. Just remember that the slicing will ruin a great cooked tri tip. Cut against the grain and remember the grain will rotate a little on you with the tri tip.

Thanks bmudd and yes I was careful on the slicing of the TT.. Justin

I have never done a Tri tip in any fashion until tonite. I always seen on other posts just how great the Tri tip is. People going on & on & on about Tri tip roast. Well I just have one thing to say about that, ya'll could not have been more spot on. Tri tip is about the most mouth watering piece of beef I have ever had, almost as good as prime rib. Now, I am about the most picky person on a cut of beef but I am sold on Tri tip. Give it a try and ya will not be disappointed, damn near melts in your mouth. WHB

Thanks for the pointers and help from all I received thru this smoke, it was fun. WHB

Man I do apologize for being the last hog to the trough, believe me it ain't a common occurrence!

I have never had a tri-tip, seems they aren't southern cut of meat. I had heard long ago they were used in chili a lot in chili competitions but I have yet to se one. That being say, its a pretty dang sad day when a pretty looking roast like you cooked can't be found so I can attempt to follow your lead.

Looks like you did an excellent job, and when you said the wife wanted Philly cheese steaks I had to start swallowing fast so as not to drool on the keyboard. Philly cheese steak with au jus (that fancy dippin sauce) oh my goodness ......

Then you present the chicken and no body likes smoked chicken like I do.....

Seriously a great job. Your welcome around my smoker any day brother.

Hey Foamheart, I have long seen and followed your posts and comments..., all I can say is I'am honored and truly humbled by your kind remarks. And the same goes here bro, you are always welcome at my table. In fact would be very honored if ya ever was to pull up a chair... Justin

Just wanted to say one more thank you to the help and pointers I was given during this smoke. Will no doubt be doing these Tri tips more often. Justin

Last, anyone have a good method to warm the leftovers up ? Just don't wanna ruin the little bit we have left. Thanks Justin

Thanks dirtsailor, I really appreciate ya chiming in here. Justin

And here's the payoff, the TT was so tender and the other fixins by Mrs.WHB. Was a very tasty meal. Justin
Great looking food there. TT is a great flavorful cut of beef, and you cooked it perfectly it seems.

I do want to point out that you did slice with the grain, and you want to slice against the grain.

Of course the flavor remains the same you just get a bit more chew to the meat. Try slicing this way next time and I think you will be much happier, if that is possible(which I know it is because I love me some Tri-tip). Cut the red line, and slice the blue lines. There, I just gave you an excuse to have to cook another one.
