Traeger in southeast North Carolina

I have been smoking for about 5 years now. I started on a Webber kettle, moved on to a char-broil off set while in grad school. About six months ago I bought a Traeger Texas. I smoke at least once a week, [IMG][/IMG]I love to smoke brisket. Welcome to the forum, johnjen. Love brisket myself. SPOT for seasoning, put it on, take it off at about 2030 IT, wrap for a couple hours. Nothing fancy. Enjoy your stay. Lots of good folks and good info here.
