Salmon turned out awesome. I was worried it might be dried out but it is super moist inside.

I would marinate the chicken breasts, then season, then wrap with bacon, then smoke them.  That would up the taste profile immensely.

About how long did it take thinking about trying them out tomorrow?

I smoked the chicken breasts for just under five hours at 225. Internal temp was 164.

The salmon was amazing. It looked a little
Dry when I took it out but it was nice and moist inside. The salmon took about 1 1/2 - 2 hours.
