Is it me? Or im I just not trying hard enough to find the 32qt  imusa pots. Target use to have them for 30bucks. Not avaliable in any stores. You go to order online. Out of stock. I've found them, but they are 60bucks plus now. Any tips?
I got the IMUSA from Wal-Mart for $21.47. It was out of stock, but I signed up for "Get In-Stock Alert" and got an e-mail about a week later -- free Site To Store shipping and it arrived in 3 days.  http://www.walmart.com/ip/IMUSA-Tamale-and-Seafood-32-Quart-Steamer/13370045

The Vasconia is more expensive, but may be a better fit -- especially if you want to mount it on its own lid (raises the bottom of the pot slightly ABOVE the kettle, instead of sitting down inside it).

Much appreciated B.  The el-cheapo temp gauge on the front there is def not going to cut it, WAY to far from my Maverick reading.  I did not use a diffuser during this test run and my temps seemed to fluctuate 10-15 degrees from time to time, I assume the lack of diffuser was to blame.  I kept one vent on the bottom completely shut and the other barely cracked, and I mean barely, just to keep the temp from rising over 260.

Originally I  bought the same thermo as you. Didn't work for crap. Now I've got a good one on my mini. BUT I always use the maverick .  IMHO The dial thermo is nothing more than a finishing touch.

Certainly so.  I would like something to be a little closer to true temp than where I'm at now with my gauge.  I'll probably order one later but not a priority at this point.  Getting that diffuser in and getting some meat on the grates is next on the agenda.
 
I am building my second mini now. I love in the UAE, so I was not able to find the tamale pots. Found a steel pot that fit, but was much smaller than the aluminum pots everyone is using. Went to California this past summer, and I picked up the stuff to build another. I am using high heat engine enamel paint now, but it keeps peeling off (when I take the tape off). Not sure why.

Dang. Some serious building going on. All I did was use a roll of 10in. wide aluminum flashing to make a barrel for my Jumbo Joe. Havent used it yet. I'll try and get some pics on here as soon as I do.

Hey now, I like that idea.  I might have to drum one of those up next.  I believe the father-in-law may have just the fix for that flashing too
 
Make sure its not galvanized flashing. Something about the heat makes it give off zinc smoke and can make one sick. So ive heard. I held the flashing together with a few pop rivits. Saw pics on a website somewhere. Cant remember where.
 
I used SS 80 at pot....so worth it, especially easy to clean and holds the heat like a champ.
I will have to keep my eye out for one in case the flashing idea doesn't jive.

I'll have to check with the FIL to see what kinda flashing it is.  Since its something we already have on hand, it'd be great to use that instead of having to buy more supplies for a build.
