Hey Gang

I am in North Carolina.

I joined becasue my first attempt at making venison sausage was a utter failure. The end result turned into dog treats, so I am here to get tips etc on how to get it right.

I built my own smoker, with some design flaws, so I am looking for tips on that as well..

Hopefully I can get some good photo's to you all at a later date.
