Turned out great!  I chose wings for the fist smoke and posted in the poultry area.

Brian- Just saw your Scar Wing post over in the Poultry Section. Dang good looking wings. Now how about sharing that gumbo recipe? biggrin.gif

As for my gumbo recipe I made this week. The base recipe is really our friend Foamheart. His technique on building a roux is the best Ive read.   No doubt i added little Irish love to it…. But the solid base from Kevin is what is truly important. After that it's up to you to personalize it.
