BTW the 36 hour brine was spot on. I didn't use any salt except for a little in the Tony's "More" spice and the brine made it perfect! Why is it that more sugar than salt in the brine, I never taste a sweet note to the meat? Are our salt taste buds bigger than our sweet budettes? Or even maybe a bit better aligned with the foods travel?

Inquiring minds what to know!

Juicy, tender, brined perfectly........... I am just in awe of myself. It just melted and flowed between the tines of the fork when you tried to pick up for a bite. I give this meat two thumb's up, had a nice beat, good rhythm, and was easy to dance to. Myself and Betty Lou Thelma Liz really liked it.

I reached to get a spoon of the three cheese mac, nearly lost my right arm up the elbow! Brother-in-law had established a camp perimeter around it, (smoked gouda, red rind cheddar, and mozzarella. The three really blended better than I thought.

Excellent meal, I just wish I could have shared. definitely will be doing this one again, and again....... Next time with some homemade apple compote, I think a creole mustard sauce would have put it right over the top.

Thanks Leah, appreciate the compliment. Would have been better had I figured out how to cut those chops a bit thinner, they ran a little less than 2" per chop. That was a bit excessive, but I can guaranty everyone got all they could eat...LOL.

Since I didn't show the Mac & Cheese, so its not fair to say this but.... it really was the highlight. I received some good imported cheese (surely by accident), and that smoked gouda in the Mac & Cheese really was amazing. I am sure folks would laugh at me cooking with it, but the Mac & Cheese was over the top.

Anyway, thanks for checking it out.

I have never written down Mac & Cheese. I'll have to think about it and write down approx. what I use. Its like the dressing recipe, you just make it and adjust... LOL.

I'll see what I can come up with.

  Thank you Sir, I have to agree, it is a smoke that should be at the top of your list. It would be a great birthday, anniversary, or a date night meal, IF she's that special. Anyone that could make ToTonka dust would maybe possibly could fit into that category.   LOL

That's sounds more than appropriate, you might try a little of that magic dust on it, gently. But its was awfully dang good just as it was.
