Just joined the group and already see I'm going to like it.

I've been smoking for better than 20 years and have been making sausage all my life it seems.

I love to build smokers and have gotten bored with the stick burners and have recently begun construction of an electric smoker that I'll use for sausage and old smoke operations. It'll be PID controlled, insulated, and will have a homemade smoke generator inside.

Hope to share more soon.

Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Thanks for the welcome gents!

To narrow my location down a bit, in at the Plano Richardson border and love to make the neighbors mouths water on a regular basis with a nice blue smoke.

Danny, you and I may have a bit in common judging from your user name, I hold an Extra class license.

Pop, I've been checking out your recipes for years and your knowledge is always trusted by me. Just never took the time to join the forum...

Gary, I have a small place just outside of Mineola, which is my favorite place to cook!

Yes, there are. I have had some great sausages and brats from Matador & Hirsch's.
