Looks great, I'll have to steal that idea.  Try using asian pear for some of the sweetness and you'll really nail that Korean taste.  If you want it solely for injection, I saw someone use asian pear cider in place of grated pear.  Koreans use the pear for a tenderizer, but it's kind of a signature flavor.

I'd have to drive to your neck of the woods to find an Asian Pear, or Asian Pear Cider! The closest Asian Market is in Portland. I can't even get Kaffir leafs without online ordering them!

You would be most welcome. I am fortunate to have 3 pear trees in my back yard. I guess I take for granted how easy it is for me to source some ingredients. There are at least a half dozen korean markets within 5 miles of my house, and even the Hispanic market up the street stocks korean ingredients.
