As much as I hate to argue with someone I respect, Foamheart is absolutely wrong on this. I am not an expert on American politics but in Canada, being talented, generous of spirit and honest will disqualify you from any political office.

Clarissa for President! I mean it makes perfect sense to me. Every notice everything she does looks perfect and she makes it looks so simple. So I think I am going to do a write in the next election!

I hate to say this, but the only kielbasa I have used is Hillshire Farms. Kielbasa is a common substitute in Jambalaya and Gumbos, when out of the bayou region.

Clarissa it really looks really good to me, you just make it all look so simple and I know better.

Thanks so much for the compliments, guys....of course not everything I make is perfect, I turn out plenty of crap too.  But like politicians everywhere I then dispose of the evidence, bribe others to secrecy, and deny it ever happened.

Kevin, until now Hillshire Farm brand was my only experience with kielbasa too.  It was definitely a fun sausage and smoking project....hope you'll give it a try after your Boudin is all gone.  I'm planning to try the kielbasa in some red beans and rice tonight.  I probably should use Andouille or something like that, but the lure of using homemade smoked sausage is too strong.

Thank you!! I would personally have liked to smoke a little longer for better color, but I have to keep the smoke light to accomodate my husband's tastes. However, the flavor is sure great.

OK, here is my last addition to this post. Here is New Year's Eve dinner....Red Beans and Rice from scratch using my own homemade smoked ham hocks, and my homemade Kielbasa. I know that I should've used Andouille, but the Kielbasa was actually really good in it, and I just added a little more cayenne pepper to compensate.


This came out great.....almost as good as Zatarain's brand! :biggrin:

Basically the only difference between Kielbasa and Andouille is the heat from Cayenne. The Cabbage and Kielbasa looks great. I have eaten the same thing since childhood but Mom either added Bow tie pasta of fried sliced Potatoes in with the Cabbage until all was browned. It develops a lot of sweetness from caramelizing the Cabbage and Onions...JJ
