So I've been hanging around gathering information for about six months now and figured it was about time I joined.  About 6 months ago I bought a MES 40 from Sam's and have made a number of things from turkeys, brisket, prime rib roast, ribs & pork loins.  I hear I have some northern and crappies on the way coming my way.  I know I'll need some help with the fish...

It seems like every time I run into a question a quick search of the forums turns up the answer.  One thing I have found with the MES is regulating and controlling the temperature, especially in the cold of Wisconsin this time of year.  The Maverick was ordered and should be here in a day or two.

Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
