Well Cheers You Very Fabulous Cookies!

And so the day after Christmas comes, and I simply smoked a piece of FROZEN sockeye that I had wanted to use up, and layered that over a hot pot of amaranth and some steamed haricot verts - with lots of chopped raw elephant garlic, olive oil and smoked paprika.

Simple, humble, and a "make shift" or "use up what's around" kind of meal aside, it was healthful, delicious, and a great or very powerful reminder that EVERY day, is indeed a holiday!

Each day is gift! As is each meal!

Here is a big wish for everyone to find the celebration in today and in all the days leading up to NEXT Christmas even, as each day is just fantastically delicious!

The tree is now down, (and away), and I am indeed UP! And LIFE, and the celebration of such, moves on!!!!!!!!!!!!!!!!!

With each day being a very new and quite powerful, and fresh adventure; here's to the exciting!!!!!!!!!!!!!

Yes, I sleep from 7pm to 3am each night. (And then accordingly eat my "main meal at circa 7, 8 or 9 in the morning" and don't feel like eating much after 2pm therefore).

An odd schedule, and yet an authentic "Morning Gal" I am! No alarm clocks, no late nights (but for the occasional event which I cannot avoid) and yet a lot of sunrises and delicious morning Mediterranean feasts! I like it this way - crazy as it seems!

Anyway, happy wrap up of the year!!!!!!!!!!!!! Make today AMAZING!!!!!!!!!!!

OH, and I was typing on the fly earlier and thus neglected to simply share that a basic, French Chardonnay that was kicking around served as the pairing. (Seeing as this a "WINE" group and that I therefore meant to mention WINE and that was the whole purpose of the post actually)....

And so with whatever you all have "around" on this "day after holiday," time, I hope you raise a big goblet of gratitude and whip up whatever that is, and toast to today and that new adventure as well!
