Hey guys, don't get on much anymore been out racing motorcycles, but had to share, decided to do a turkey for xmas (got two in the freezer) 16lbs used a different brine than I have in the past, injecte and rubbed with butter, garlic powder, onion powder, pepper. Did some mods to the smoke hollow and am incredibly happy. Made up vents for the bottom right side and top rear, cut out the grill under the chip box and found some probably 15+ year old hickory chunks at my dad's. Did a test run and the hickory smells incredible!!!! Using those chunks and Apple chips. And here she is at 3hrs, 136° I'm excited, smells amazing, best consistent smoke I've had with this lil electric!!!
