here is the beginning of 15 pounds of boneless shoulder for the boys from the gym. i have trained some of the young fellas in power lifting over the last years and at xmas time when they all fly back home where we live i put on a BIG DINNER ...
some HEAVY HITTERS  WITH A KNIFE AND FORK FOR SURE ... 
 not all the biggest in stature but pound for pound they can make food disappear and pull the big weights off the floor too....
the wife and i are always happy to have this group together as we never has our own kids ...
also on the menu will be my homemade slaw, my own chipotle sauce, and of course ... home made buns to wrap it all up in.
up here in northern canada i just try my best to do what the southern boys have been brought up on and done for years !!!!!
i just learm from TV and on here and do my own twist.

really basic, was on the treadmill watching MEXICAN MADE EASY at the gym ...   lol .... and they did this recipe, HERE GOES..

canned chipotle peppers, seed them or too hot for some folks. smash, flatten, chop and do it till you have a paste going on. throw that in a bowl. add mayonnaise, and mix up, add more peppers or mayo to get the color you are looking for. add the juice of a fresh lime (for a big batch) 1/2 lime for a smaller batch, and some garlic powder. it shouldnt be too runny, but not as thick as mayo. i like to make it a day ahead and the flavor gets thru real good. Wife loves this stuff so i make big batches. put it on almost anything. i even put it on my omelette when i make them with a bit of ketchup  :0)

ITS THAT EASY !!!!!!!
and it keeps in the fridge for a long time but it wont .. it will disappear pretty quick.

there is a spot in town that does wraps, i told them about my sauce and they now make it for their own pulled pork wraps ......

AND IT STARTS !!!!!!!
put in the 2 chunks of shoulder at 7 PM at 225 and started the smoke. will be eating these sometimes tomorrow late afternoon.
next pics when i wrap them in foils and only God knows when that will be...   HA HA HA
 
Looks good. Not nearly enough there if you invited the real heavy weights that hang out at the shelter though.

it was ready way earlier than expected so i stuffed it a cooler with moving mats as suggested on the site here. 5 hours later it was still too hot to handle......

the crew just mangled the meat we may say. 12 of the 15 pounds disappeared .....
next year i will do up a flock of spatch cocks for them .......

a bunch of well fed people..... waiting for the toblerone chocolate cheese cake at this point !!!!
