Hi, my name is Terry and I am already a long time smoker. I have a BGE (Big Green Egg), presently going on 15 years, and have smoked extensively on it. I use my grill 3-4 times a week year round.
But I am interested in expanding into sausage making and cold smoking to include building a cold smoker. I was reading through some web sites on sausage making and ran across an item - Polish kabanosy - I just have to make this! :) The more I read the more I want to start making some of these great recipes. So here I am.
I hunt and fish year round and have a good supply of ready material for practice. I am working my way through the web site learning about cold smoking and am really looking forward to trying it. Thanks for all the great info.
