Landjaeger questions.....HELP!!!

I have been wanting to make some landjaeger for quite a while and the time has finally come. I have a few questions hopefully someone could answer. I see some folks use cure #1 and some use cure #2 why is that??? Also, is there a set in stone drying time after smoking, or is it a personal preference thing depending on how dry you want them?

Good day Stayhot, I've been wanting to do some of this myself, and have been looking at the recipe from lenpoli. He uses cure #2 and starter culture to do a fermented landjaeger, and they end up losing about 45% of their original weight at around 10 days air drying.

Cure #1 would be ok if doing a "mock landjaeger" where you didn't air dry it for so long and used the smoker or oven to dry it out quickly instead.
