Jim from New Orleans here. I grew up in Memphis and participated in the Memphis Barbecue Festival competition on a team. I think my major responsibility was toting wood and keeping our alcohol consumption up to par. I've always been a grillmeister; but, haven't tried smoking until the last year or so with satisfactory, but mediocre, results on a few items.
