Recap: Roast came out fantastic! About 3.5 hours at between 200 - 300 degrees (tough regulating temp as I was running around getting the house ready). Gave it a little smoke at the end. If you want a more even cook throughout, try cooking at 200 for an extended time and turn it down to 160 when your about 15-20 degrees away from your desired IT
