Sorry it's been a while guys and gals. I have been a little busy and a little cold to be outside smoking. But the time has finally pushed me to get some meat going so here we go.

Being from the competition world the only beef we ever did was brisket. Now I love brisket but I love money more so it's not really a cut that gets used at our house a lot. Substitute...... The chuck roast. It's beef, good size and shape, very tough, and has great marbling. As far as I'm concerned sounds like a poor man's brisket to me! Now on to the pics on this first try.....

So here are the pics.....

First the Chuck rinsed and patted dry...ready to create the masterpiece


Using a simple store bought rub today. Its pretty good, but a bit heavy on the mesquite...Personally not much of a mesquite guy.....


Also added a Tbl of rub to some butter for injecting the beast....


While that was melding together, I started the rub down.....


Then the injection......


I wont actually get this on the fire until Sunday night, so to kick up the flavor a little bit I tossed the whole thing in the vacuum sealer until Sunday morning :) ....


Can't wait to see how this beauty turns out....
