Good morning,

I have an MES 30 analog it runs great, the only issue i have is that the watater pan is way too small so it dosent catch any of the drippings i tried using a banking pan to catch some of it but i find that it throws of my cooking time because the pan is too big, now i did fill it with some water so maybe that had an impact on the temp, do you guys have any tips on how to keep the MES clean?
