No this is not mine, for some reason the big guy upstairs wants me on a diet and will only give me "Tag Soup" for hunting the last 2yrs. One of they guys at work got a nice whitetail buck this yr and wanted me to make up some snack stick for him,, I could not resist, could have been a better weekend thou 6*here now and snowing. Hope the ol smoker can make it thru, may be a long day

Sit back and enjoy.

All stuffed Sat. night did this on my one and I was pooped when done.

Into the smoker on Sunday Morn (Pics to follow)


I have tried LEM before and like them just not this flavor will see. (Did 4 packages of these already had cure packets in it.)


Idaho white tail


Seasoning


Mixed cure in 2 cups water and stirred till dissolved


Let the stuffing begin. Using 21MM Clear Collegen casings


tried to make each rope 4ft long (Didn't always work.) Ran out of the clear casing used some mahogany I had, same size


I have some are pockets but when you hare stuffing by yourself you cant get them all. I just need more practice.

I stuffed all of these in about 1 1/4 not to bad using my 5lb lem stuffer.

Going to the smoker shortly,,More pics to follow.

Hanging to dry at room temperature for about an hour remember full smoker is a happy smoker at my smoker is happy

What is your cut for making the sticks?

If I supply everything seasoning, casings and I stuff and smoke I get 1/2 if they just want to use my smoker or something else we decide then, usually I do everything which I have never had anyone complain, One guys is to bring me another 20lab of mule deer next weekend. He wants Jalapeno sticks in his.

Looks good man. Yep it's a little bit chilly up here in the NW right now. Hoping for a warm up mid week. Looking foreward to some Q-view.

Just about done now my thermometer quit

No its not set for 170 going to 152 does anybody else have problems with their thermometers when its cold out thinking about getting the Maverick it's 8 degrees here now

Any problems with the Maverick in cold weather also looking to thermal pen

If you used sheep casings for these, how did you deal with these little suckers?

I got some a couple weeks ago, decided to make breakfast links the same day.  Got several sheep casings out of the package, rinsed them off, singularly, then while doing the others, put them in a container, with one end draped over the edge.  When I had them all rinsed off, I then ran water through them and back into the container they went.  I worked on these for an hour at this point.  About 20 minutes later, after washing my hands,  I tried to put one of these sheep casings on the stuffer funnel.  I tried for 1 hour and 15 minutes on one casing, to no avail to get that sucker open.  I had as toothpick to help, no avail.  I cut the end off several times trying to get it open.  At that point, it was never use these casings again attitude.

I ran my maverick et 732 just the other night when it was like 5 degrees and it worked awesome. Much better than my smartphone did.

I think I recall he used collegen casings. I have not used sheep casings before but I know hog casings perform much better after being soaked in warm water for a few hours.

One of my first Mavs had the LCD screen freeze on it. it wasn't the 732. The iGrill worked great the last two smokes in single digit and subzero temps.

Wow, Started out with 20lbs, let bloom on counter for a few hrs, then into paper sack and into fridge overnight. Went to weigh this morning to see what I had to give him back.

We got a total of 12lbs of sticks so I gave him 7 and I took 5 - I felt kinda bad, never really weighed them before I did not think we would loose 8lbs in moisture. Makes a person think.

They guy at work was very happy with it, I thought it was kinda dry due to no fat in it just pure venison, told him next time we should do 15lbs of venison and 5lbs of porkbutt. He said it could have been a little hotter.

I gave him a bag of my smoked pretzels and he really like the heat on them. The longer you let them sit the hotter they get, my boss about went nuts they were great. here is a link to them
