Hey everyone! New to smoking and found this forum while researching how to prepare a brisket.

Successfully completed my first smoke last weekend, did a 15lb brisket and 7lb pork loin for my family(mom, dad, brother, sister, aunt, uncle, my wife and daughter as well as a few friends). I was pretty nervous cooking that much meat my first time, but it turned out great! Now I'm hooked... Will be doing beef jerky this weekend and probably dinner one night, not sure what to do for dinner yet.

I have a smoke hollow lp smoker that was given to me by my uncle after he upgraded to a weber smoker. It works pretty well but I have trouble getting the temp any higher than 200 degrees loaded or unloaded. Bought a new regulator and hose and tried a different tank but no change. I might put a new burner assembly in it and see if that fixes my problem.

Thanks guys.

Just bought a cheap charcoal/wood smoker at menards today for the hell of it. 30 bucks was too cheap to pass up. And if it doesn't work too well at least I didn't waste a ton of money on it.. any tips for keeping a charcoal/wood fire going enough to smoke brisket or ribs? Something that takes more than an hour or two..

Sorry no pictures yet. I'll take some today after i get the snow brushed off.

Brian I used to live in Carmel and we like it down here, much more calm. Little bit of snow currently, maybe 4".
 
And since I just put the mini brisket on...

Has anyone smoked one of these brisket center cuts? It's cut from the flat and has about 1/4 inch of fat on top. It looked like nice meat, usda prime.. my local Kroger doesn't sell packers I have to go to Wal-Mart or a butcher to get them. But Kroger did have these.
 
Just to follow up on my problem of not being able to get temps above 200-250 with my smoke hollow lp smoker, the screen on the burner tube was full of grease. Cleaned the screen up and now it gets up to 425 easily on high and will maintain 225-250 on medium.
